Ingredients

The base

  • 1 cup cooked quinoa
  • 1 flax egg flax egg

The toppings

  • ½ cup vegan shredded cheese
  • 2 tablespoons vegan shredded cheese (for topping)
  • 3 tablespoons marinara sauce
  • ¼ teaspoon salt
  • ½ teaspoon ground pepper
  • ½ teaspoon garlic powder
  • 3 teaspoons Italian seasoning
  • ¼ teaspoon crushed red pepper flakes (optional)
  • marinara sauce for dipping marinara sauce

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a 12-cup mini muffin pan.
  2. Mix all ingredients except for 2 tablespoons of cheese in a bowl.
  3. Divide the mixture into the muffin cups, packing them tightly.
  4. Bake for 12 to 15 minutes, then add the remaining cheese on top.
  5. Broil for 30 seconds to 1 minute until the cheese is melted and crispy.
  6. Let cool for 15 minutes before removing from the pan.
  7. Serve with marinara sauce for dipping.
