Quinoa Pizza Dough

Ingredients

  • cup Cornflour
  • ½ cup Quinoa flour
  • ½ cup Tapioca starch
  • 2 tablespoon Potato starch
  • ¼ teaspoon Xanthan gum
  • ½ teaspoon Salt
  • 2 teaspoon Raw sugar
  • 2 teaspoon Baking powder
  • 1 tablespoon Olive oil
  • scant ½ cup water
  • 1 teaspoon Vinegar

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Mix all dry ingredients and the olive oil together until well combined.
  3. Combine the water and vinegar in a separate bowl.
  4. Add most of the water-vinegar mixture to the flour mixture and stir well, adding the remaining water slowly as needed to achieve a sticky but shape-holding dough.
  5. Oil a pizza tray and form the dough into a rough ball, then press it down into a disk shape about 2/8 inches thick.
  6. Optionally, cover the dough with oiled baking paper and roll it out with a rolling pin.
  7. Top the dough with your desired ingredients and bake for 10-15 minutes until the edges are browned and the cheese is bubbling.
