Cheesy Buffalo Quinoa Bites

Instructions
- 1. Preheat the oven to 350°F and spray a mini muffin tin with cooking spray.
- 2. In a medium pot, bring the vegetable broth and quinoa to a boil, then reduce heat and simmer covered for about 15 minutes until liquid is absorbed. Set aside to cool.
- 3. In a large bowl, combine the beaten eggs, almond meal, minced garlic, hot sauce, mozzarella cheese, and 2 tbsp of Parmesan cheese. Mix well.
- 4. Spoon the mixture into the mini muffin tin and sprinkle with the remaining 1 tbsp of Parmesan cheese.
- 5. Bake for 20 minutes and serve hot with celery and ranch dressing.
