Kale Quinoa Bites

Ingredients

The Bites

  • cups cooked quinoa, at room temperature
  • 4 large eggs, beaten
  • scant ½ teaspoon fine grain sea salt
  • 1 small onion, finely chopped
  • ½ cup crumbled feta
  • 1 clove garlic, minced
  • 1 cup very finely chopped kale
  • ½ cup shelled edamame
  • ¾ cup breadcrumbs

To Serve

  • to taste avocado
  • to taste chives

Instructions

  1. Preheat the oven to 375°F and prepare mini-muffin tins with butter and parchment paper.
  2. In a medium bowl, combine quinoa, eggs, and salt. Stir in onion, feta, garlic, kale, and edamame.
  3. Add most of the breadcrumbs and let the mixture sit for a few minutes.
  4. Fill the muffin tins with the mixture, pressing down and sprinkling with remaining breadcrumbs.
  5. Bake for 25-30 minutes until golden and cooked through.
  6. Allow to cool slightly before removing from the pans. Serve hot or at room temperature with avocado and chives.
