Kale Quinoa Bites

Instructions
- Preheat the oven to 375°F and prepare mini-muffin tins with butter and parchment paper.
- In a medium bowl, combine quinoa, eggs, and salt. Stir in onion, feta, garlic, kale, and edamame.
- Add most of the breadcrumbs and let the mixture sit for a few minutes.
- Fill the muffin tins with the mixture, pressing down and sprinkling with remaining breadcrumbs.
- Bake for 25-30 minutes until golden and cooked through.
- Allow to cool slightly before removing from the pans. Serve hot or at room temperature with avocado and chives.
