30-Minute Quinoa Bites

Instructions
- Grease a mini muffin pan with nonstick spray.
- Preheat the oven to 350°F.
- In a bowl, whisk together the eggs and then stir in the quinoa.
- Add the remaining ingredients and mix until combined.
- Pour the mixture evenly into 20 muffin tins without overfilling.
- Bake for 20 minutes or until the eggs are set.
- Allow to cool for a few minutes before removing from the pan.
- Store in a freezer bag if desired and freeze.
- To reheat, defrost in the microwave and heat on high for about 30 seconds.
