30-Minute Quinoa Bites

Ingredients

The base

  • 6 pieces eggs
  • 1 cup cooked quinoa

The mix-ins

  • ½ cup Swiss cheese, shredded
  • ½ cup zucchini, grated
  • ¼ cup grape tomatoes, quartered

The seasonings

  • ¼ teaspoon salt
  • ¼ teaspoon rosemary, crushed
  • ½ teaspoon pepper

Instructions

  1. Grease a mini muffin pan with nonstick spray.
  2. Preheat the oven to 350°F.
  3. In a bowl, whisk together the eggs and then stir in the quinoa.
  4. Add the remaining ingredients and mix until combined.
  5. Pour the mixture evenly into 20 muffin tins without overfilling.
  6. Bake for 20 minutes or until the eggs are set.
  7. Allow to cool for a few minutes before removing from the pan.
  8. Store in a freezer bag if desired and freeze.
  9. To reheat, defrost in the microwave and heat on high for about 30 seconds.
