Cheesy Broccoli Quinoa Bites

Ingredients

  • 2 cups cooked quinoa
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • ½ cup grated carrot
  • cups chopped broccoli
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F.
  2. In a food processor, blend the broccoli and grated carrot until finely chopped.
  3. In a large bowl, mix together the chopped veggies, cooked quinoa, eggs, shredded cheese, and salt.
  4. Divide the quinoa mixture evenly into two mini muffin tins sprayed with cooking spray, pressing down each one to hold together.
  5. Bake the quinoa bites for 15 to 20 minutes, or until lightly browned.
  6. Let cool for 5 minutes before serving.
