Instructions
- Preheat the oven to 350°F.
- In a food processor, blend the broccoli and grated carrot until finely chopped.
- In a large bowl, mix together the chopped veggies, cooked quinoa, eggs, shredded cheese, and salt.
- Divide the quinoa mixture evenly into two mini muffin tins sprayed with cooking spray, pressing down each one to hold together.
- Bake the quinoa bites for 15 to 20 minutes, or until lightly browned.
- Let cool for 5 minutes before serving.
