Curry Potato Soup

vegetable stock or 1 tbsp vegetable stock paste and 8 cups of water

Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, cooking until translucent and fragrant.
- Add all spices and potatoes, cooking for 5 minutes while stirring.
- Increase heat to high, add stock or water, and bring to a boil.
- Reduce heat and cook for 20-25 minutes until potatoes are tender.
- Stir in coconut milk and cook for another 5 minutes.
- Serve garnished with fresh cilantro.
