Ingredients

Meat Sauce

  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 medium onion, diced
  • 1 piece bay leaf
  • 2 teaspoons oregano
  • 2 teaspoons thyme
  • ¼ cup parsley, chopped
  • 1 ½ lbs ground beef
  • 1 can canned tomato sauce (5-ounce)
  • 2 tablespoons tomato paste
  • 1 stick cinnamon
  • 2 teaspoons beef bouillon
  • cup beef stock

Greek Bechamel Sauce

  • cup butter
  • ½ cup all-purpose flour
  • 3 cups whole milk
  • 3 egg yolks beaten
  • 1 cup Kefalotyri or Parmesan cheese, grated
  • a pinch nutmeg

Pasta Layer

  • ½ package pastitsio noodles or mostaccioli
  • ½ lb kasseri cheese, asiago, or Italian blend, grated (about 4 cups)
  • 1 large egg white

Instructions

  1. Heat olive oil in a large pot and sauté garlic, onion, bay leaves, oregano, thyme, parsley, and ground beef until the beef is browned.
  2. Add tomato sauce, tomato paste, cinnamon stick, and beef bouillon, mixing until combined.
  3. Pour in beef stock, reduce heat, and simmer for 45 minutes to 1 hour until the sauce thickens.
  4. Remove from heat and let the meat sauce cool.
  5. In a saucepan, melt butter and mix in flour to create a roux, then gradually whisk in milk until thickened.
  6. Add beaten egg yolks, then stir in grated cheese and nutmeg, and set aside.
  7. Cook pasta according to package instructions, drain, and toss with egg white and grated cheese.
  8. Preheat oven to 180°C/350°F.
  9. Grease a baking dish and layer the pasta, followed by meat sauce and more grated cheese.
  10. Pour bechamel sauce on top and add more cheese.
  11. Bake for 30 minutes until cheese is bubbly and golden.
  12. Let it sit for 20-30 minutes before serving and garnish with chopped parsley.
