Instructions
- Heat olive oil in a large pot and sauté garlic, onion, bay leaves, oregano, thyme, parsley, and ground beef until the beef is browned.
- Add tomato sauce, tomato paste, cinnamon stick, and beef bouillon, mixing until combined.
- Pour in beef stock, reduce heat, and simmer for 45 minutes to 1 hour until the sauce thickens.
- Remove from heat and let the meat sauce cool.
- In a saucepan, melt butter and mix in flour to create a roux, then gradually whisk in milk until thickened.
- Add beaten egg yolks, then stir in grated cheese and nutmeg, and set aside.
- Cook pasta according to package instructions, drain, and toss with egg white and grated cheese.
- Preheat oven to 180°C/350°F.
- Grease a baking dish and layer the pasta, followed by meat sauce and more grated cheese.
- Pour bechamel sauce on top and add more cheese.
- Bake for 30 minutes until cheese is bubbly and golden.
- Let it sit for 20-30 minutes before serving and garnish with chopped parsley.
