Ingredients

The Pasta

  • ¼ Cup Extra Virgin Olive Oil
  • 4 Cloves Garlic
  • 1 Small Red Onion
  • 1 6 oz. can Tomato Paste
  • 1 Teaspoon Sea Salt
  • 1 15 oz. can Chickpeas
  • 1 Cup Small Shaped Pasta
  • 3 Cups Chicken Broth
  • 1 Bay Leaf

The Garnishes

  • 1 Teaspoon Crushed Red Pepper Flakes
  • 1 Teaspoon Parmesan Cheese

Instructions

  1. Heat olive oil in a large pot over high heat until it shimmers.
  2. Chop garlic and red onion, then add to the pot and sauté until lightly browned and fragrant.
  3. Stir in tomato paste and sea salt, cooking for about a minute.
  4. Add chickpeas, pasta, chicken broth, and bay leaf, scraping the bottom of the pot.
  5. Lower heat and simmer uncovered until pasta is cooked and most liquid is absorbed, about 20 minutes.
  6. Remove from heat, serve, and garnish with crushed red pepper flakes and parmesan cheese if desired.
