Instructions
- Heat olive oil in a large pot over high heat until it shimmers.
- Chop garlic and red onion, then add to the pot and sauté until lightly browned and fragrant.
- Stir in tomato paste and sea salt, cooking for about a minute.
- Add chickpeas, pasta, chicken broth, and bay leaf, scraping the bottom of the pot.
- Lower heat and simmer uncovered until pasta is cooked and most liquid is absorbed, about 20 minutes.
- Remove from heat, serve, and garnish with crushed red pepper flakes and parmesan cheese if desired.
