Warming Chickpea Pasta with Kale

Ingredients

The pasta

  • ¾ box pasta

The sauce

  • 4 tbsp olive oil
  • 1 chopped white onion
  • 2 cloves garlic
  • 19 oz chickpeas
  • 1 tsp salt
  • 1 tbsp pepper
  • 1 tsp garlic powder
  • ½ tsp ground cloves
  • ½ tsp ground cinnamon
  • 1 tsp dried basil
  • 1 tbsp tomato paste
  • 1 cup crushed tomatoes
  • cups water
  • 2 cups kale
  • to taste vegan or regular shredded parmesan cheese

Instructions

  1. Prepare and organize all vegetables and ingredients.
  2. Heat olive oil in a medium pot over medium-high heat, then add onions and garlic, cover, and cook until softened.
  3. Season with salt, pepper, cloves, cinnamon, and dried basil, stirring for about 1 minute.
  4. Add chickpeas, stir, cover, and cook for 5 minutes, stirring occasionally.
  5. Add tomato paste, crushed tomatoes, and water, then simmer for 15 minutes until the sauce thickens.
  6. Cook pasta according to package directions, drain, and return to pot with olive oil.
  7. Check the chickpea sauce; if thickened and chickpeas are soft, stir in chopped kale and remove from heat.
  8. Top with shredded parmesan cheese before serving.
