Instructions
- Heat olive oil in a large non-stick frying pan over medium heat.
- Crack the eggs into the pan and season with salt and pepper. Fry until the whites and yolks are set, about 4-5 minutes.
- Transfer the eggs to paper towels to drain.
- Arrange the salad, jalapeños, cherry tomatoes, chickpeas, sun-dried tomatoes, green onions, and sliced avocado in bowls.
- Top each bowl with the fried eggs, pumpkin seeds, mint leaves, and red pepper flakes before serving.
