Spicy Veggie Breakfast Bowls

Ingredients

  • 2 tbsp olive oil
  • 4 large eggs
  • 8 cups mixed leaf salad
  • 4 pieces jalapeño peppers
  • 1 ¼ cup cherry tomatoes
  • 2 cups canned chickpeas
  • 6 pieces sun-dried tomatoes
  • 4 pieces green onions
  • 2 large ripe avocados
  • 1 small bunch mint leaves
  • 4 tbsp pumpkin seeds
  • 1 tsp crushed red pepper flakes
  • to taste kosher salt
  • to taste black pepper

Instructions

  1. Heat olive oil in a large non-stick frying pan over medium heat.
  2. Crack the eggs into the pan and season with salt and pepper. Fry until the whites and yolks are set, about 4-5 minutes.
  3. Transfer the eggs to paper towels to drain.
  4. Arrange the salad, jalapeños, cherry tomatoes, chickpeas, sun-dried tomatoes, green onions, and sliced avocado in bowls.
  5. Top each bowl with the fried eggs, pumpkin seeds, mint leaves, and red pepper flakes before serving.
