Miso Noodle Soup

Instructions
- Combine vegetable broth and water in a large saucepan and bring to a boil.
- Add soba noodles and return to a boil, then reduce heat, cover, and simmer for 5 minutes.
- Stir in tofu, bell pepper, green onions, miso, ginger, and crushed red pepper, then simmer covered for 3 minutes.
- Add snow peas and carrot ribbons, simmer uncovered for 1 minute until peas are crisp-tender.
- Ladle soup into bowls and garnish with additional crushed red pepper or sriracha if desired.
