Miso Noodle Soup

Ingredients

The soup

  • 4 cups vegetable broth
  • ½ cup water
  • 3 ounces soba noodles, broken in half
  • 1 14-ounce container extra-firm tofu, drained and sliced
  • 1 medium red bell pepper, sliced
  • cup sliced green onions
  • 1 tablespoon white miso
  • 1 tablespoon grated fresh ginger
  • teaspoon crushed red pepper
  • 1 cup fresh snow peas, halved
  • 1 medium carrot, peeled and ribboned

Optional garnishes

  • to taste additional red pepper flakes
  • to taste sriracha

Instructions

  1. Combine vegetable broth and water in a large saucepan and bring to a boil.
  2. Add soba noodles and return to a boil, then reduce heat, cover, and simmer for 5 minutes.
  3. Stir in tofu, bell pepper, green onions, miso, ginger, and crushed red pepper, then simmer covered for 3 minutes.
  4. Add snow peas and carrot ribbons, simmer uncovered for 1 minute until peas are crisp-tender.
  5. Ladle soup into bowls and garnish with additional crushed red pepper or sriracha if desired.
