Simple Beet Fettuccine

Ingredients

  • 150 g rye flour or whole wheat pastry flour
  • 160 g semola flour
  • 1 unit egg, whisked
  • 3 tablespoons red beet juice
  • ⅓ - ½ cup water

Instructions

  1. Combine the flours in a bowl or on a countertop.
  2. Add the whisked egg and mix it into the flour.
  3. Stir in the beet juice and gradually add water until the dough forms a dryish mass.
  4. Knead the dough on a counter for 7-10 minutes until silky and cohesive.
  5. Wrap the dough in plastic and let it rest for at least 30 minutes.
  6. Roll out the dough thinly using a rolling pin or pasta machine.
  7. Cut the rolled dough into fettuccine noodles.
  8. Cook the noodles in boiling salted water for about 1 minute.
