Ingredients

  • 1 cup rye flour
  • 1 cup semolina flour
  • ½ teaspoon fine grain sea salt
  • 1 large egg, whisked
  • ¼ cup cold water, plus more as needed

Instructions

  1. Combine the rye flour, semolina flour, and salt on a cutting board.
  2. Make a well in the center and add the whisked egg.
  3. Gradually incorporate the flour into the egg using a fork.
  4. Drizzle cold water into the mixture and stir until it forms a cohesive mass.
  5. Knead the dough for about 5 to 10 minutes until it becomes elastic and shiny.
  6. Wrap the dough in plastic and let it rest for at least 30 minutes.
  7. Roll out the dough using a pasta machine or by hand to your desired thickness.
  8. Cut the rolled dough into noodles and dust with semolina flour.
  9. Cook the noodles in boiling salted water for about 5 minutes.
