Instructions
- Combine the rye flour, semolina flour, and salt on a cutting board.
- Make a well in the center and add the whisked egg.
- Gradually incorporate the flour into the egg using a fork.
- Drizzle cold water into the mixture and stir until it forms a cohesive mass.
- Knead the dough for about 5 to 10 minutes until it becomes elastic and shiny.
- Wrap the dough in plastic and let it rest for at least 30 minutes.
- Roll out the dough using a pasta machine or by hand to your desired thickness.
- Cut the rolled dough into noodles and dust with semolina flour.
- Cook the noodles in boiling salted water for about 5 minutes.
