Homemade Pasta

Instructions
- Make a nest with the flour on a clean surface and add the eggs, olive oil, and salt in the center.
- Use a fork to break up the eggs while keeping the flour walls intact.
- Gently mix in the flour with your hands to form a shaggy ball.
- Knead the dough for 8 to 10 minutes until it becomes cohesive and smooth.
- If the dough is too dry, sprinkle with water; if too sticky, dust with flour.
- Shape the dough into a ball, wrap it in plastic, and let it rest for 30 minutes.
- Slice the dough into four pieces and flatten one into an oval disk.
- Run the dough through a pasta maker three times on the widest setting.
- Optionally, fold the dough to create a more rectangular shape.
- Roll the dough through the pasta maker on progressively thinner settings.
- Lay the rolled pasta on a floured baking sheet and sprinkle with flour.
- Repeat with the remaining dough pieces.
- Cut the pasta using a pasta cutter and cook in boiling salted water for 1 to 2 minutes.
