Ingredients

  • 2 cups flour (all-purpose, semolina, “00”, whole grain, or a blend)
  • 2 large eggs
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon fine grain sea salt

Instructions

  1. Make a mound of flour on the countertop and create a deep crater in the center.
  2. Add the eggs, olive oil, and salt into the crater and mix with a fork, gradually incorporating the flour.
  3. Drizzle in water as needed to form a dough, knead for 7-10 minutes until smooth and elastic.
  4. Wrap the dough in plastic and let it rest for 30 minutes at room temperature.
  5. Roll out the dough thinly using a rolling pin or a pasta maker, then cut into desired shapes.
  6. Cook the pasta in well-salted boiling water for about 1 minute, reserving some pasta water if needed for sauce.
