Instructions
- Make a mound of flour on the countertop and create a deep crater in the center.
- Add the eggs, olive oil, and salt into the crater and mix with a fork, gradually incorporating the flour.
- Drizzle in water as needed to form a dough, knead for 7-10 minutes until smooth and elastic.
- Wrap the dough in plastic and let it rest for 30 minutes at room temperature.
- Roll out the dough thinly using a rolling pin or a pasta maker, then cut into desired shapes.
- Cook the pasta in well-salted boiling water for about 1 minute, reserving some pasta water if needed for sauce.
