Homemade Spinach-Basil Pasta

Ingredients

The pasta

  • 1 large egg
  • 1 tablespoon water
  • 2 cups spinach leaves
  • 1 cup basil leaves
  • 1 ΒΌ cups flour

For serving

  • to taste extra virgin olive oil
  • to taste fresh lemon juice
  • to taste Parmesan cheese
  • to taste kosher salt
  • to taste fresh cracked black pepper

Instructions

  1. Combine egg, water, spinach, and basil in a food processor and pulse until smooth.
  2. Add flour and pulse until the dough forms a ball.
  3. Turn the dough onto a lightly floured surface or silicone mat and roll it out thinly.
  4. Cut the rolled dough into thin strips and let them sit for about 20 minutes.
  5. Boil salted water in a large pot and add the pasta, cooking for 5-7 minutes.
  6. Drain the pasta and toss it with olive oil, lemon juice, salt, pepper, and Parmesan cheese.
