Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup semolina flour or cornmeal
  • ½ tsp salt
  • ¾ cup water
  • 2 tbsp olive oil

Instructions

  1. Mix the flours and salt in a bowl, creating a well in the center.
  2. Add lukewarm water and olive oil into the well, and mix until combined.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Cover the dough with plastic wrap and chill in the refrigerator for 30-45 minutes.
  5. After chilling, cut the dough in half and roll one portion out thinly.
  6. Dust the rolled dough with flour and cut it into long strips.
  7. Form nests with the pasta strands and set them aside.
  8. Boil salted water in a large pot, then add the pasta.
  9. Cook the pasta until it floats and is tender, approximately 3-4 minutes.
  10. Serve with your favorite sauce, cheese, or pesto.
