Homemade Pasta

all-purpose flour

semolina flour or cornmeal

Instructions
- Mix the flours and salt in a bowl, creating a well in the center.
- Add lukewarm water and olive oil into the well, and mix until combined.
- Knead the dough on a floured surface for about 5 minutes until smooth.
- Cover the dough with plastic wrap and chill in the refrigerator for 30-45 minutes.
- After chilling, cut the dough in half and roll one portion out thinly.
- Dust the rolled dough with flour and cut it into long strips.
- Form nests with the pasta strands and set them aside.
- Boil salted water in a large pot, then add the pasta.
- Cook the pasta until it floats and is tender, approximately 3-4 minutes.
- Serve with your favorite sauce, cheese, or pesto.
