Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 3 large egg yolks
  • 1 large whole egg
  • 2 tablespoons milk
  • ¼-½ cup cold water

Instructions

  1. Whisk together the flour and salt, then make a well in the center.
  2. Add the egg yolks, whole egg, and milk into the well.
  3. Blend the mixture with a fork until it looks pebbly.
  4. Drizzle in water, one tablespoon at a time, mixing until it forms a ball.
  5. Knead the dough until all flour is incorporated and it's not sticky.
  6. Sprinkle flour on a clean surface and roll out half of the dough until it's paper thin.
  7. Cut the rolled dough into strips of desired width and length.
  8. Cook the noodles immediately in boiling water for 2-3 minutes or let them dry completely.
  9. If dried, break into pieces and store in an airtight bag.
