Ingredients

The dough

  • 4 cups all-purpose flour
  • tsp Diamond Crystal kosher salt
  • ¾ tsp Morton kosher salt
  • 1 cup baking soda
  • cups water

For dusting

  • 2 cups potato starch or cornstarch

Instructions

  1. Preheat the oven to 250°F and spread baking soda on a baking sheet to bake for 1 hour.
  2. In a stand mixer, combine flour, baked baking soda, salt, and water, mixing until a shaggy dough forms.
  3. Knead the dough until smooth, cover, and let it rest for at least 3 hours.
  4. Cut the dough into 6 equal strips, flatten, and roll through a pasta maker until ⅛ inch thick.
  5. Dust the rolled dough with starch, cut into 1-foot pieces, and run through the pasta maker on the spaghetti setting.
