Ingredients

The dough

  • 4 cups all-purpose flour
  • tsp Diamond Crystal kosher salt
  • ¾ tsp Morton kosher salt
  • cups water

The kansui

  • 1 cup baking soda

The dusting

  • 2 cups potato starch or cornstarch

Instructions

  1. Preheat the oven to 250°F and spread baking soda on a parchment-lined baking sheet. Bake for 1 hour and let cool.
  2. In a stand mixer, combine flour, dissolved baked baking soda, salt, and water. Mix until a shaggy dough forms, then knead briefly and let rest for 30 minutes.
  3. Knead the dough until smooth and bouncy, then cover and let rest for at least 3 hours or chill for up to 12 hours.
  4. Cut the dough into 6 equal strips, flatten them, dust with starch, and roll through a pasta maker until ⅛ inch thick.
  5. Dust the rolled dough with starch, run it through the spaghetti setting of the pasta maker, and form loose bundles as they exit.
