Homemade Rye Bread

Ingredients

The dough

  • 3 cups bread or all-purpose flour
  • 1 cup rye flour
  • 2 teaspoons kosher salt
  • 2 teaspoons instant yeast
  • 1 tablespoon caraway seeds
  • 1.75 cups lukewarm water
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons extra-virgin olive oil

For greasing

  • as needed softened unsalted butter

Instructions

  1. Whisk together the flours, salt, instant yeast, and caraway seeds in a large bowl.
  2. In a separate bowl, whisk the water and honey until dissolved, then add to the flour mixture along with 1 tablespoon of olive oil.
  3. Mix until a sticky dough forms, then cover and let rise in a warm place for 2 to 3 hours until doubled in size.
  4. Preheat the oven to 375ºF and grease a loaf pan with softened butter.
  5. Once the dough has risen, drizzle the remaining olive oil over it and coat the surface.
  6. Shape the dough into a loaf and place it seam side down in the prepared pan.
  7. Let the dough rise until it crowns the rim of the pan by about an inch, approximately 45 minutes to 1 hour.
  8. Bake for 45 minutes until the top is evenly browned, then cool for at least 30 minutes before slicing.
