Homemade Rye Bread

Instructions
- Whisk together the flours, salt, instant yeast, and caraway seeds in a large bowl.
- In a separate bowl, whisk the water and honey until dissolved, then add to the flour mixture along with 1 tablespoon of olive oil.
- Mix until a sticky dough forms, then cover and let rise in a warm place for 2 to 3 hours until doubled in size.
- Preheat the oven to 375ºF and grease a loaf pan with softened butter.
- Once the dough has risen, drizzle the remaining olive oil over it and coat the surface.
- Shape the dough into a loaf and place it seam side down in the prepared pan.
- Let the dough rise until it crowns the rim of the pan by about an inch, approximately 45 minutes to 1 hour.
- Bake for 45 minutes until the top is evenly browned, then cool for at least 30 minutes before slicing.
