Strawberry Rye Loaf

Ingredients

The loaf

  • 2 cups rye flour
  • 1 teaspoon salt
  • ¼ teaspoon baking powder
  • 1 cup white granulated sugar
  • ½ vanilla bean scraped
  • 1 cup unsalted butter
  • 3 large eggs
  • cup milk

The glaze and topping

  • ½ cup strawberries
  • 2 teaspoons white granulated sugar
  • a pinch salt
  • cups powdered sugar
  • 2 tablespoons buckwheat groats

Instructions

  1. Preheat the oven to 325°F and prepare a loaf pan.
  2. Mix the dry ingredients in one bowl and combine the sugar with vanilla in another bowl until well mixed.
  3. Add softened butter to the sugar mixture and mix until pale, then add eggs one at a time.
  4. Alternate adding the flour mixture and milk until combined.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
  6. For the glaze, cook strawberries with sugar and salt until soft, then strain to get the juice.
  7. Whisk the strawberry juice with powdered sugar until smooth, adding more juice if needed.
  8. Pour the glaze over the cooled loaf and top with buckwheat groats before serving.
