Instructions
- Toast the rye flour in a skillet until golden, then cool.
- In a food processor, mix both flours, salt, and sugar, then pulse in the butter until granular.
- Add cold water gradually until the dough forms a shaggy ball, then refrigerate for at least 1 hour.
- Preheat the oven and the baking sheet.
- Roll out the dough to a 14-inch circle and set aside.
- Combine strawberries, lemon zest, and rosemary in a bowl; mix sugar, salt, and cornstarch in another bowl and add to strawberries.
- Scoop the strawberry mixture onto the dough center, arranging strawberries cut side down.
- Fold the dough over the filling, crimping as you go, and brush with egg wash and sprinkle with sugar if desired.
- Transfer the galette to the preheated baking sheet and bake for 20 minutes until golden.
