Ingredients

The crust

  • 1 ¼ cup all-purpose flour
  • ¼ cup rye flour
  • 1 ½ tablespoons sugar
  • 1 teaspoon salt
  • 10 tablespoons butter (chilled)
  • ¼–⅓ cup ice water
  • 1 egg optional for egg wash
  • to taste none coarse sugar for sprinkling

The filling

  • 1 ½ lb strawberries (sliced)
  • 1 teaspoon lemon zest
  • 1 teaspoon rosemary
  • ½ cup sugar
  • 2 tablespoons cornstarch
  • a pinch none salt

Instructions

  1. Toast the rye flour in a skillet until golden, then cool.
  2. In a food processor, mix both flours, salt, and sugar, then pulse in the butter until granular.
  3. Add cold water gradually until the dough forms a shaggy ball, then refrigerate for at least 1 hour.
  4. Preheat the oven and the baking sheet.
  5. Roll out the dough to a 14-inch circle and set aside.
  6. Combine strawberries, lemon zest, and rosemary in a bowl; mix sugar, salt, and cornstarch in another bowl and add to strawberries.
  7. Scoop the strawberry mixture onto the dough center, arranging strawberries cut side down.
  8. Fold the dough over the filling, crimping as you go, and brush with egg wash and sprinkle with sugar if desired.
  9. Transfer the galette to the preheated baking sheet and bake for 20 minutes until golden.
