Instructions
- Prepare the galette dough by mixing flour, salt, and sugar in a bowl, then cut in the butter until crumbly.
- Gradually add ice water until a cohesive dough forms, then wrap and refrigerate for 30 minutes.
- Combine the berries, sugar, corn starch, and lemon juice in a bowl and let sit for 15 minutes.
- Strain the berry mixture to remove excess liquid.
- Roll out the dough into a 12x12 inch circle and transfer to a baking sheet.
- Place the berry mixture in the center of the dough, leaving a 2-inch border.
- Fold the edges of the dough over the berries and pinch to seal.
- Optionally, brush with an egg wash and sprinkle with coarse sugar.
- Bake at 425°F for 25-30 minutes until the crust is golden and the filling is bubbling.
- Let cool for at least an hour before slicing and serving.
