Ingredients

Galette Crust

  • cups all-purpose flour
  • 1 tablespoon white sugar
  • ½ teaspoon salt
  • ½ cup unsalted butter, sliced
  • 4-6 tablespoons ice water
  • 1 egg yolk egg yolk
  • 1 tablespoon milk or water

Berry Filling

  • 6 ounces blackberries
  • 6 ounces raspberries
  • 6 ounces blueberries
  • cup white sugar
  • 2 tablespoons corn starch
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the galette dough by mixing flour, salt, and sugar in a bowl, then cut in the butter until crumbly.
  2. Gradually add ice water until a cohesive dough forms, then wrap and refrigerate for 30 minutes.
  3. Combine the berries, sugar, corn starch, and lemon juice in a bowl and let sit for 15 minutes.
  4. Strain the berry mixture to remove excess liquid.
  5. Roll out the dough into a 12x12 inch circle and transfer to a baking sheet.
  6. Place the berry mixture in the center of the dough, leaving a 2-inch border.
  7. Fold the edges of the dough over the berries and pinch to seal.
  8. Optionally, brush with an egg wash and sprinkle with coarse sugar.
  9. Bake at 425°F for 25-30 minutes until the crust is golden and the filling is bubbling.
  10. Let cool for at least an hour before slicing and serving.
