Ingredients

Crust

  • 1 ¼ cups all-purpose flour
  • 1 tablespoon sugar
  • ½ cup butter
  • 3 tablespoons ice water
  • 1 large egg
  • a pinch salt

Filling

  • 4 cups blueberries
  • 2 tablespoons cornstarch
  • ¼ cup sugar
  • 1 tablespoon lemon juice

Instructions

  1. Combine flour and cold butter in a bowl and work together until crumbly.
  2. Add 2 tablespoons of ice cold water and stir until the dough comes together, then shape into a disc and refrigerate for 30 minutes.
  3. Toss blueberries with cornstarch, lemon juice, and sugar.
  4. Preheat the oven to 190C/375F.
  5. Roll the dough into a 12-inch circle and place it on a lined baking sheet.
  6. Place the blueberries in the center, leaving a 2-inch border, and fold the dough over the blueberries.
  7. Whisk the egg with the remaining tablespoon of water, brush the edges of the dough, sprinkle with sugar, and bake for 30-35 minutes.
