Instructions
- Preheat the oven to 400°F.
- Blend all crust ingredients in a food processor until combined, adding ice water as needed to form a ball. Chill in the fridge.
- Mix blueberries, maple syrup, lemon juice, and flour in a bowl until coated.
- Roll out the dough on parchment paper into a 12-inch circle.
- Place blueberries in the center of the dough, leaving a 2-inch border.
- Fold the edges of the dough over the blueberries, sealing any openings.
- Brush the crust with the beaten egg.
- Bake for 24-27 minutes until golden brown, then let cool for at least 10 minutes before serving.
