Ingredients

Crust

  • cups white whole wheat flour
  • ¼ teaspoon salt
  • 6 tablespoons butter, cold + cubed
  • ¼ cup maple syrup

Filling

  • 3 cups blueberries
  • 2 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • 1 tablespoon white whole wheat flour
  • 1 egg beaten

Instructions

  1. Preheat the oven to 400°F.
  2. Blend all crust ingredients in a food processor until combined, adding ice water as needed to form a ball. Chill in the fridge.
  3. Mix blueberries, maple syrup, lemon juice, and flour in a bowl until coated.
  4. Roll out the dough on parchment paper into a 12-inch circle.
  5. Place blueberries in the center of the dough, leaving a 2-inch border.
  6. Fold the edges of the dough over the blueberries, sealing any openings.
  7. Brush the crust with the beaten egg.
  8. Bake for 24-27 minutes until golden brown, then let cool for at least 10 minutes before serving.
