Ingredients

Galette Crust

  • cups flour
  • 1 tsp sugar

  • 8 Tbsp cold butter
  • 3 Tbsp ice water

Lemon Blueberry Filling

  • ½ lb blueberries
  • 1 Tbsp sugar
  • 1 tsp cornstarch
  • 1 fresh lemon

Cream Cheese Filling

  • 4 oz cream cheese
  • 2 tsp sugar
  • 1 large egg

Instructions

  1. Prepare the galette crust by mixing flour, sugar, and salt.
  2. Cut in cold butter until the mixture resembles damp sand.
  3. Gradually add ice water until a dough forms, then refrigerate for 1 hour.
  4. Mix blueberries, sugar, cornstarch, lemon zest, and lemon juice in a bowl and set aside.
  5. In another bowl, combine cream cheese, sugar, egg yolk, and lemon juice until smooth.
  6. Preheat the oven to 400°F and roll out the dough into a 14-16 inch circle.
  7. Transfer the dough to a parchment-lined baking sheet and spread the cream cheese mixture in the center.
  8. Pour the blueberry mixture over the cream cheese and fold the edges of the dough over the filling.
  9. Brush the exposed dough with the reserved egg white.
  10. Bake for 30 minutes until golden brown, then let cool for 10 minutes before slicing.
