Instructions
- Prepare the galette crust by mixing flour, sugar, and salt.
- Cut in cold butter until the mixture resembles damp sand.
- Gradually add ice water until a dough forms, then refrigerate for 1 hour.
- Mix blueberries, sugar, cornstarch, lemon zest, and lemon juice in a bowl and set aside.
- In another bowl, combine cream cheese, sugar, egg yolk, and lemon juice until smooth.
- Preheat the oven to 400°F and roll out the dough into a 14-16 inch circle.
- Transfer the dough to a parchment-lined baking sheet and spread the cream cheese mixture in the center.
- Pour the blueberry mixture over the cream cheese and fold the edges of the dough over the filling.
- Brush the exposed dough with the reserved egg white.
- Bake for 30 minutes until golden brown, then let cool for 10 minutes before slicing.
