Strawberry Galette

Instructions
- Freeze the butter and cream cheese for 15 minutes.
- Pulse flour and salt in a food processor, then add cream cheese and butter until mixture resembles coarse meal.
- Add apple cider vinegar and ice water, pulsing until dough holds together.
- Shape dough into a disk, wrap in plastic, and chill for at least 2 hours.
- Preheat oven to 400°F and roll out dough to a 13" round.
- Rub lemon zest into sugar, then toss with sliced strawberries and let sit for 20 minutes.
- Drain strawberries, reserving some juice, and mix juice with cornstarch before adding to strawberries.
- Mound berry mixture in the center of the dough, fold edges up, and brush with egg wash.
- Bake for 40-50 minutes until golden brown and juices are bubbling.
- Let cool for at least 2 hours before serving, optionally with ice cream or whipped cream.
