Strawberry Galette

Ingredients

Dough

  • ½ cup unsalted butter
  • 3 oz cream cheese
  • cups all-purpose flour
  • ½ tsp Diamond Crystal kosher salt
  • 2 tsp apple cider vinegar

Filling and Assembly

  • 1 zest lemon
  • cup sugar
  • lb fresh strawberries
  • 2 Tbsp cornstarch
  • 1 large egg
  • optional vanilla ice cream or whipped cream

Instructions

  1. Freeze the butter and cream cheese for 15 minutes.
  2. Pulse flour and salt in a food processor, then add cream cheese and butter until mixture resembles coarse meal.
  3. Add apple cider vinegar and ice water, pulsing until dough holds together.
  4. Shape dough into a disk, wrap in plastic, and chill for at least 2 hours.
  5. Preheat oven to 400°F and roll out dough to a 13" round.
  6. Rub lemon zest into sugar, then toss with sliced strawberries and let sit for 20 minutes.
  7. Drain strawberries, reserving some juice, and mix juice with cornstarch before adding to strawberries.
  8. Mound berry mixture in the center of the dough, fold edges up, and brush with egg wash.
  9. Bake for 40-50 minutes until golden brown and juices are bubbling.
  10. Let cool for at least 2 hours before serving, optionally with ice cream or whipped cream.
