Ingredients

Crust

  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • ¼ teaspoon salt
  • ½ cup cold unsalted butter, cubed
  • ¼ cup ice cold water
  • 1 large egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • to taste coarse sugar (optional)

Filling

  • 1 ½ cups peeled and sliced fresh peaches
  • 1 ½ cups sliced fresh strawberries
  • 3 tablespoons granulated sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon pure vanilla extract

Instructions

  1. Prepare the crust by whisking flour, sugar, and salt together, then cutting in the cold butter until crumbly.
  2. Add ice cold water gradually until the dough forms, then shape into a disk and refrigerate for at least 1 hour.
  3. For the filling, gently toss the sliced peaches and strawberries with sugar, cornstarch, and vanilla extract, then refrigerate.
  4. Roll out the chilled dough into a 12-inch circle on a floured surface and transfer it to a lined baking sheet.
  5. Spoon the fruit filling into the center of the dough, leaving a border, and fold the edges over the filling.
  6. Brush the edges with egg wash and sprinkle with coarse sugar if desired.
  7. Chill the assembled galette for 15-20 minutes while preheating the oven to 425°F (218°C).
  8. Bake for 30-35 minutes until the filling is bubbly and the crust is golden brown.
  9. Cool for 10 minutes before slicing and serving, preferably with vanilla ice cream.
