Instructions
- Prepare the crust by whisking flour, sugar, and salt together, then cutting in the cold butter until crumbly.
- Add ice cold water gradually until the dough forms, then shape into a disk and refrigerate for at least 1 hour.
- For the filling, gently toss the sliced peaches and strawberries with sugar, cornstarch, and vanilla extract, then refrigerate.
- Roll out the chilled dough into a 12-inch circle on a floured surface and transfer it to a lined baking sheet.
- Spoon the fruit filling into the center of the dough, leaving a border, and fold the edges over the filling.
- Brush the edges with egg wash and sprinkle with coarse sugar if desired.
- Chill the assembled galette for 15-20 minutes while preheating the oven to 425°F (218°C).
- Bake for 30-35 minutes until the filling is bubbly and the crust is golden brown.
- Cool for 10 minutes before slicing and serving, preferably with vanilla ice cream.
