Ingredients

Galette Dough

  • 1⅓ cups all-purpose flour
  • ½ teaspoon salt
  • 2 teaspoons sugar
  • 8 tablespoons cold butter
  • 6–8 tablespoons cold water

Peach Filling

  • lbs fresh peaches
  • 1 tablespoon lemon juice
  • ¼ cup brown sugar
  • 1 teaspoon vanilla
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon nutmeg (or cardamom)
  • teaspoon salt
  • 1 tablespoon flour, cornstarch (or arrowroot)
  • 1 beaten egg optional egg wash
  • to taste coarse sugar for sprinkling

Instructions

  1. Make the pie crust by mixing flour, sugar, and salt in a food processor, then adding butter and pulsing until it resembles coarse sand.
  2. Add cold water gradually until the dough forms a shaggy ball, then shape it into a disk and refrigerate for 40 minutes.
  3. Prepare the filling by slicing peaches and mixing them with lemon juice, brown sugar, vanilla, salt, and spices in a bowl.
  4. Preheat the oven to 375°F.
  5. Roll out the dough on a floured surface to about 1/8-¼ inch thick and place it in a cast iron skillet.
  6. Spoon the peach filling into the center of the dough, fold the edges over the filling, and brush with egg wash.
  7. Bake for 45-55 minutes until golden and bubbly, then let it rest for 10 minutes before serving.
