Instructions
- Make the pie crust by mixing flour, sugar, and salt in a food processor, then adding butter and pulsing until it resembles coarse sand.
- Add cold water gradually until the dough forms a shaggy ball, then shape it into a disk and refrigerate for 40 minutes.
- Prepare the filling by slicing peaches and mixing them with lemon juice, brown sugar, vanilla, salt, and spices in a bowl.
- Preheat the oven to 375°F.
- Roll out the dough on a floured surface to about 1/8-¼ inch thick and place it in a cast iron skillet.
- Spoon the peach filling into the center of the dough, fold the edges over the filling, and brush with egg wash.
- Bake for 45-55 minutes until golden and bubbly, then let it rest for 10 minutes before serving.
