Mini Peach Galettes

Ingredients

The crust

  • 1 double batch homemade pie crust or store-bought

The fruit filling

  • 2 pieces peaches, pitted and sliced
  • 1 piece nectarine, pitted and sliced
  • 4 to 5 pieces strawberries, stems removed and sliced
  • 2 tablespoons brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 pinch salt

The streusel topping

  • 1 tablespoon sugar
  • 1 tablespoon brown sugar
  • 3 tablespoons unsalted butter, melted
  • ½ cup all-purpose flour
  • 1 pinch salt
  • ¼ cup walnuts, chopped

Instructions

  1. Preheat the oven and line a baking sheet with parchment paper.
  2. Prepare the fruit filling by mixing sliced fruit, brown sugar, vanilla, and salt in a bowl.
  3. Make the streusel by combining sugars, melted butter, flour, salt, and walnuts in a medium bowl until clumpy.
  4. Roll out the pie crust and cut it into 6 rounds, then place them on the baking sheet.
  5. Spoon the fruit mixture onto the center of each round, fold the dough over the filling, and top with streusel.
  6. Chill the assembled galettes in the freezer for about 10 minutes.
  7. Brush the tops with egg wash and bake for 20 to 22 minutes until golden brown and bubbling.
