Mini Fruit Galettes

Ingredients

The crust

  • 2 crusts Flaky Pie Crust or All Butter Pie Crust dough

The filling

  • cups mixed berries or other fruit
  • 1 Tablespoon cornstarch
  • 2 Tablespoons granulated sugar
  • 1 teaspoon lemon juice or vanilla extract

For brushing

  • 2 Tablespoons whole milk

Optional toppings

  • to taste coarse sugar
  • to taste chopped or sliced nuts

Instructions

  1. Prepare the pie dough in advance and chill it for at least 2 hours.
  2. Line two baking sheets with parchment paper.
  3. Mix the filling ingredients in a bowl and refrigerate until ready to use.
  4. Roll out the chilled pie dough into a large circle and cut out rounds using a cookie cutter.
  5. Place the dough rounds on the prepared baking sheets and fill each with about ¼ cup of the fruit filling.
  6. Fold the edges of the dough over the filling, leaving the center exposed.
  7. Brush the edges with milk and sprinkle with optional toppings, then chill for at least 20 minutes.
  8. Preheat the oven to 375°F (191°C).
  9. Bake the galettes for 25-28 minutes until the edges are lightly browned.
  10. Cool for at least 5 minutes before serving.
