Instructions
- Prepare the tart pastry dough by combining flour, confectioners’ sugar, and salt in a food processor, then add diced butter and pulse.
- Add the beaten egg and process until the dough forms a mass, then roll it into a circle and chill.
- Make the blueberry filling by mixing blueberries with sugar, cornstarch, and lemon zest.
- Assemble the galette by placing tapioca on the dough, adding the blueberry mixture, folding the edges, and brushing with egg.
- Bake the galette at 425°F (218°C) for about 25 minutes until golden.
