Ingredients

Tart Pastry Dough

  • cups all purpose flour

  • 1 stick (4 oz. / 115 g) cold unsalted butter
  • 1 large egg (beaten)

Blueberry Topping

  • 4 cups blueberries
  • ½ cup granulated sugar
  • tablespoons cornstarch
  • 1 lemon zest
  • 2 tablespoons instant tapioca
  • 1 egg beaten
  • 1 tablespoon Demerara sugar (for sprinkling)

Instructions

  1. Prepare the tart pastry dough by combining flour, confectioners’ sugar, and salt in a food processor, then add diced butter and pulse.
  2. Add the beaten egg and process until the dough forms a mass, then roll it into a circle and chill.
  3. Make the blueberry filling by mixing blueberries with sugar, cornstarch, and lemon zest.
  4. Assemble the galette by placing tapioca on the dough, adding the blueberry mixture, folding the edges, and brushing with egg.
  5. Bake the galette at 425°F (218°C) for about 25 minutes until golden.
