Ingredients

The bread

  • 1 ½ cups white whole wheat flour

  • cup granulated sugar
  • 3 tablespoons coconut oil (melted and cooled)
  • ½ cup plain nonfat Greek yogurt
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups small diced strawberries

The glaze (optional)

  • ½ cup powdered sugar
  • ½ teaspoon pure vanilla extract
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 350°F and prepare an 8×4-inch loaf pan.
  2. In one bowl, combine the dry ingredients: flour, cinnamon, salt, and baking soda.
  3. In another bowl, mix the sugar and melted coconut oil, then stir in the Greek yogurt, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients without overmixing, then fold in the strawberries.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45 to 55 minutes, tenting with foil at 30 minutes to prevent over-browning.
  7. Cool the bread in the pan before slicing.
  8. For the glaze, whisk the ingredients together and drizzle over the cooled bread before serving.
