Instructions
- Preheat the oven to 350°F and prepare an 8×4-inch loaf pan.
- In one bowl, combine the dry ingredients: flour, cinnamon, salt, and baking soda.
- In another bowl, mix the sugar and melted coconut oil, then stir in the Greek yogurt, eggs, and vanilla extract.
- Combine the wet and dry ingredients without overmixing, then fold in the strawberries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45 to 55 minutes, tenting with foil at 30 minutes to prevent over-browning.
- Cool the bread in the pan before slicing.
- For the glaze, whisk the ingredients together and drizzle over the cooled bread before serving.
