Ingredients

The bread

  • cups white whole wheat flour or regular whole wheat flour or all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground cinnamon (optional)
  • 1 cup blueberries (fresh or frozen)
  • 1 cup plus 1 tablespoon plain nonfat Greek yogurt
  • ½ cup honey
  • ¼ cup unsalted butter (melted and cooled)
  • teaspoons pure vanilla extract
  • 1 small lemon (zest only, optional)
  • 2 large eggs

The topping (optional)

  • 2 tablespoons raw turbinado sugar
  • ¼ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan.
  2. Whisk together the dry ingredients in one bowl.
  3. In a separate bowl, toss the blueberries with a teaspoon of the dry mixture.
  4. In another bowl, combine the wet ingredients until smooth.
  5. Combine the wet and dry ingredients, then gently fold in the blueberries.
  6. Prepare the topping by mixing sugar and cinnamon, if using.
  7. Transfer the batter to the loaf pan and sprinkle with the topping.
  8. Bake for 30 minutes, then tent with foil and bake for an additional 15 to 20 minutes until a toothpick comes out clean.
  9. Let cool before slicing and enjoy.
