Instructions
- Preheat the oven to 350°F and prepare a loaf pan.
- Whisk together the dry ingredients in one bowl.
- In a separate bowl, toss the blueberries with a teaspoon of the dry mixture.
- In another bowl, combine the wet ingredients until smooth.
- Combine the wet and dry ingredients, then gently fold in the blueberries.
- Prepare the topping by mixing sugar and cinnamon, if using.
- Transfer the batter to the loaf pan and sprinkle with the topping.
- Bake for 30 minutes, then tent with foil and bake for an additional 15 to 20 minutes until a toothpick comes out clean.
- Let cool before slicing and enjoy.
