Instructions
- Preheat the oven to 350°F and prepare a loaf pan.
- In a large bowl, whisk together the yogurt, oil, brown sugar, granulated sugar, egg, lemon zest, and vanilla until combined.
- Add the flour, baking soda, and salt to the wet mixture and stir until just combined.
- In a small bowl, toss the blueberries with 1 tablespoon of flour to coat them.
- Gently fold the blueberries into the batter and spread it evenly in the prepared pan.
- Sprinkle the top with coarse sugar and bake for 50-55 minutes or until a toothpick comes out clean.
- Let the bread cool completely before slicing and serving.
