Ingredients

Wet Ingredients

  • cup plain Greek yogurt or sour cream
  • cup vegetable, canola or avocado oil
  • cup lightly packed brown sugar
  • cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Add-ins

  • ¾ cup fresh blueberries
  • 1 tablespoon all-purpose flour
  • 2 tablespoons coarse sugar

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan.
  2. In a large bowl, whisk together the yogurt, oil, brown sugar, granulated sugar, egg, lemon zest, and vanilla until combined.
  3. Add the flour, baking soda, and salt to the wet mixture and stir until just combined.
  4. In a small bowl, toss the blueberries with 1 tablespoon of flour to coat them.
  5. Gently fold the blueberries into the batter and spread it evenly in the prepared pan.
  6. Sprinkle the top with coarse sugar and bake for 50-55 minutes or until a toothpick comes out clean.
  7. Let the bread cool completely before slicing and serving.
