Ingredients

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup Greek yogurt
  • cup corn oil
  • 2 large eggs
  • tablespoons vanilla extract
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 2 cups blueberries

Instructions

  1. Mix all the dry ingredients in one bowl.
  2. Lightly beat the eggs and add them to a large bowl with Greek yogurt, oil, lemon zest, and lemon juice.
  3. Mix the wet ingredients until well blended.
  4. Combine the wet mixture with the dry mixture and mix just enough to blend.
  5. Fold in the blueberries carefully to avoid overmixing.
  6. Preheat the oven to 375°F and bake for 30-35 minutes until golden brown.
