Instructions
- Preheat the oven to 375°F (or 350°F for dark-coated muffin tins). Prepare a muffin tin with liners or nonstick spray.
- In a medium bowl, whisk together the yogurt, milk, egg, vanilla, and honey.
- In a large bowl, combine the oats, flour, baking powder, baking soda, cinnamon, and salt. Add the blueberries or chocolate chips and mix.
- Pour the yogurt mixture and melted butter or coconut oil into the dry ingredients and stir until just combined.
- Distribute the batter evenly into the muffin cups. Bake for 14-17 minutes, checking for doneness with a toothpick.
- Let the muffins cool in the tin for a few minutes before transferring to a cooling rack.
