Ingredients

Dry ingredients

  • cups white whole wheat flour
  • ¾ cup rolled oats
  • 1 tbsp baking powder
  • ½ tsp salt

Wet ingredients

  • 1 cup Greek yogurt
  • ½ cup brown sugar
  • cup milk
  • ½ cup oil (avocado, canola, or other neutral oil)
  • 2 count eggs
  • 2 tsp vanilla extract

Mix-ins & topping

  • ½ cup mini chocolate chips
  • 1 cup wild blueberries (fresh or frozen)
  • to taste none brown sugar (for sprinkling)

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, mix Greek yogurt, milk, brown sugar, eggs, oil, and vanilla extract until well combined.
  3. In another bowl, combine the dry ingredients: white whole wheat flour, rolled oats, baking powder, and salt.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined, avoiding overmixing.
  5. Fold in the chocolate chips and blueberries until just combined.
  6. Scoop the batter into a lined muffin pan and sprinkle a bit of brown sugar on top of each muffin.
  7. Bake for 18-22 minutes until the tops are golden brown and a toothpick comes out clean.
