Instructions
- Preheat the oven to 350°F and prepare a 9” x 5” loaf pan with cooking spray.
- In a large bowl, mix together the egg, applesauce, sugar, and vanilla extract until combined.
- Stir in the melted butter.
- In a separate bowl, whisk together 1 ½ cups of flour, baking soda, baking powder, and salt.
- Combine the dry ingredients with the wet ingredients until just mixed.
- Toss the blueberries in the remaining teaspoon of flour and fold them into the batter.
- Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a toothpick comes out clean.
- Cool the bread in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Slice into 12 pieces once cool.
