Ingredients

The batter

  • 1 large egg
  • 1 cup unsweetened applesauce
  • cup sugar
  • 1 teaspoon vanilla extract
  • 4 tablespoons light butter, melted
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

The blueberries

  • 1 ½ cups fresh blueberries
  • 1 teaspoon all-purpose flour (for coating blueberries)

Instructions

  1. Preheat the oven to 350°F and prepare a 9” x 5” loaf pan with cooking spray.
  2. In a large bowl, mix together the egg, applesauce, sugar, and vanilla extract until combined.
  3. Stir in the melted butter.
  4. In a separate bowl, whisk together 1 ½ cups of flour, baking soda, baking powder, and salt.
  5. Combine the dry ingredients with the wet ingredients until just mixed.
  6. Toss the blueberries in the remaining teaspoon of flour and fold them into the batter.
  7. Pour the batter into the prepared loaf pan and bake for 45-55 minutes, or until a toothpick comes out clean.
  8. Cool the bread in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Slice into 12 pieces once cool.
