Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • ¼ teaspoon salt
  • ¾ teaspoon baking soda
  • cups mashed bananas
  • ½ cup butter
  • 1 teaspoon vanilla extract
  • ¼ cup milk
  • 1 teaspoon apple cider vinegar
  • ½ cup blueberries

Instructions

  1. Preheat the oven to 180C/350F and line a loaf pan with parchment paper.
  2. In a large mixing bowl, mix the dry ingredients: flour, sugar, salt, and baking soda.
  3. Add the wet ingredients: mashed bananas, melted butter, vanilla extract, milk, and apple cider vinegar, and mix until just combined.
  4. Gently fold in the blueberries.
  5. Transfer the batter to the prepared loaf pan and top with extra blueberries if desired.
  6. Bake for 40-50 minutes, or until a skewer comes out clean.
  7. Allow to cool in the pan before transferring to a wire rack to cool completely.
