Ingredients

Dry Ingredients

  • 1.75 cups white whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • teaspoon salt
  • 1.5 cups fresh blueberries or frozen

Wet Ingredients

  • 2 large eggs
  • ½ cup maple syrup
  • 3 medium ripe bananas, mashed (1.5 cups mashed)
  • ¼ cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil

Instructions

  1. Preheat the oven to 350ºF and spray a bread pan with nonstick cooking spray.
  2. Set aside ½ cup of blueberries for later.
  3. Mix the dry ingredients in a medium bowl and set aside.
  4. In a separate bowl, mash the bananas and mix in the remaining wet ingredients except for the coconut oil.
  5. Slowly add the dry ingredients to the wet mixture, then add the melted coconut oil and mix again.
  6. Pour the batter into the greased bread pan, sprinkle the reserved blueberries on top, and bake for 45-50 minutes.
  7. Let the banana bread cool for 5 minutes before removing it from the pan to cool completely.
