Instructions
- Preheat the oven to 350ºF and spray a bread pan with nonstick cooking spray.
- Set aside ½ cup of blueberries for later.
- Mix the dry ingredients in a medium bowl and set aside.
- In a separate bowl, mash the bananas and mix in the remaining wet ingredients except for the coconut oil.
- Slowly add the dry ingredients to the wet mixture, then add the melted coconut oil and mix again.
- Pour the batter into the greased bread pan, sprinkle the reserved blueberries on top, and bake for 45-50 minutes.
- Let the banana bread cool for 5 minutes before removing it from the pan to cool completely.
