Instructions
- Preheat the oven to 325°F and prepare a 9x5 inch loaf pan.
- Mix the milk and vinegar in a small bowl and let it sit for at least 10 minutes.
- In a large bowl, whisk together the flours, sweetener, baking powder, baking soda, salt, and cinnamon.
- In another bowl, mash the bananas and mix in the oil and milk mixture.
- Combine the banana mixture with the dry ingredients until fully incorporated.
- Coat the blueberries in tapioca flour and fold them into the batter.
- Pour the batter into the prepared loaf pan and bake for 32-36 minutes or until a toothpick comes out clean.
- Allow to cool, then slice and enjoy.
