Ingredients

  • ¼ cup milk of choice
  • 1 tsp apple cider vinegar
  • cup buckwheat flour
  • cup oat flour
  • cup almond flour
  • ¼ cup granulated sweetener of choice
  • tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon (optional)
  • cups mashed bananas (about 3 medium bananas)
  • cup canola oil
  • ½ cup blueberries
  • 1 Tbsp tapioca flour

Instructions

  1. Preheat the oven to 325°F and prepare a 9x5 loaf pan.
  2. In a small bowl, mix the milk and vinegar and let it sit for at least 10 minutes.
  3. In a large bowl, whisk together the flours, sweetener, baking powder, baking soda, salt, and cinnamon.
  4. In another bowl, mash the bananas and mix in the oil and milk mixture.
  5. Combine the banana mixture with the dry ingredients until fully incorporated.
  6. Coat the blueberries in tapioca flour and fold them into the batter.
  7. Pour the batter into the prepared loaf pan and bake for 32-36 minutes or until a toothpick comes out clean.
  8. Slice and enjoy your blueberry banana bread!
