Healthy Blueberry Banana Bread

Ingredients

  • 3 medium very over-ripe bananas
  • 2 large eggs
  • cup honey or pure maple syrup
  • ¼ cup oil (avocado oil recommended)
  • 2 tsp pure vanilla extract
  • 1 ¼ cups packed almond flour
  • 1 ½ cups oat flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • ½ tsp fine sea salt
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F and spray a 9x5 inch loaf pan with cooking spray.
  2. In a large mixing bowl, mash the bananas until you have about 1 ½ cups.
  3. Add the eggs, honey, oil, and vanilla to the mashed bananas and whisk until well combined.
  4. Add the almond flour, oat flour, baking soda, baking powder, cinnamon, and salt, and mix until just incorporated.
  5. Fold in the blueberries gently.
  6. Pour the mixture into the prepared loaf pan.
  7. Bake for about 1 hour to 1 hour 10 minutes, until a knife comes out almost clean, covering loosely with foil after about 40 minutes to prevent over-browning.
  8. Allow the bread to cool in the pan for at least 30 minutes before transferring to a wire rack to cool completely.
