Healthy Blueberry Banana Bread

Instructions
- Preheat the oven to 350°F and spray a 9x5 inch loaf pan with cooking spray.
- In a large mixing bowl, mash the bananas until you have about 1 ½ cups.
- Add the eggs, honey, oil, and vanilla to the mashed bananas and whisk until well combined.
- Add the almond flour, oat flour, baking soda, baking powder, cinnamon, and salt, and mix until just incorporated.
- Fold in the blueberries gently.
- Pour the mixture into the prepared loaf pan.
- Bake for about 1 hour to 1 hour 10 minutes, until a knife comes out almost clean, covering loosely with foil after about 40 minutes to prevent over-browning.
- Allow the bread to cool in the pan for at least 30 minutes before transferring to a wire rack to cool completely.
