Instructions
- 1. In a large bowl, blend eggs, light brown sugar, mashed bananas, vanilla extract, and melted butter until smooth and fluffy.
- 2. In a separate bowl, combine bread flour, baking soda, and sea salt.
- 3. Gradually fold the dry mixture into the wet ingredients using a spatula, being careful not to overmix.
- 4. Fold in the sour cream until fully combined, then fold in the blueberries.
- 5. Prepare a 9x5 loaf pan by oiling and lightly flouring it. Pour the batter into the pan.
- 6. Bake at 350°F for 55 minutes.
- 7. After baking, let the loaf cool in the pan on a wire rack for 10 minutes, then remove from the pan and cool for another 10 minutes before serving.
