Ingredients

  • 10 ounces Gluten Free Baking Flour Mix
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 2 units flax eggs or egg replacer
  • 1 cup coconut sugar
  • ½ cup coconut oil
  • ½ unit vanilla bean or vanilla extract
  • ½ cup vegan coconut or plain yogurt
  • ¾ cup mashed bananas
  • 1 ½ cups chopped strawberries

Instructions

  1. Preheat the oven to 350°F and prepare a 9 x 5 loaf pan.
  2. Sift together the gluten-free flour, baking powder, baking soda, and sea salt in a medium bowl.
  3. In a stand mixer, mix the flax eggs, sugar, and coconut oil for about 2 minutes.
  4. Add the vanilla, yogurt, and mashed bananas to the mixture and mix for another 2 minutes.
  5. Combine half of the dry ingredients with the wet mixture, mix for 30 seconds, then add the rest and mix again for another 30 seconds.
  6. Fold in the chopped strawberries until just combined.
  7. Pour the batter into the loaf pan, smooth the top, and sprinkle the remaining strawberries on top.
  8. Bake for 65-70 minutes until a toothpick comes out with a few crumbs.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
