Strawberry Banana Bread

Instructions
- Preheat the oven to 350°F and prepare a 9 x 5 loaf pan.
- Sift together the gluten-free flour, baking powder, baking soda, and sea salt in a medium bowl.
- In a stand mixer, mix the flax eggs, sugar, and coconut oil for about 2 minutes.
- Add the vanilla, yogurt, and mashed bananas to the mixture and mix for another 2 minutes.
- Combine half of the dry ingredients with the wet mixture, mix for 30 seconds, then add the rest and mix again for another 30 seconds.
- Fold in the chopped strawberries until just combined.
- Pour the batter into the loaf pan, smooth the top, and sprinkle the remaining strawberries on top.
- Bake for 65-70 minutes until a toothpick comes out with a few crumbs.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
