Dark Rye Bread

Ingredients

  • 1 cup blanched almond flour
  • ¾ cup brown flaxmeal
  • ½ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • ¾ teaspoon cream of tartar
  • 3 large eggs
  • 2 tablespoons olive oil
  • ¼ cup water
  • 2 tablespoons caraway seeds

Instructions

  1. Combine almond flour, flaxmeal, salt, baking soda, and cream of tartar in a large bowl.
  2. In a separate small bowl, mix eggs, olive oil, and water.
  3. Stir the wet ingredients into the dry mixture, then fold in the caraway seeds.
  4. Let the batter sit for 2 minutes to thicken.
  5. Transfer the batter into a greased small loaf pan (7.5 x 3.5 inches or 7.5 x 3.75 inches).
  6. Bake at 350°F for 35-45 minutes.
  7. Allow to cool for 1 hour before serving.
