Ingredients

The dough

  • cups bread flour
  • 2 teaspoons instant yeast
  • 2 teaspoons coarse salt
  • cups water

Optional

  • as needed cornmeal

Instructions

  1. Mix the flour, yeast, and salt in a bowl, then add water and combine until a sticky dough forms.
  2. Cover the bowl and let the dough rise at room temperature for 2-3 hours until it doubles in size.
  3. For best flavor, refrigerate the dough for at least 12 hours and up to 3 days.
  4. Dust a baking sheet with flour or cornmeal, turn out the dough, cut in half, and shape into loaves.
  5. Let the shaped dough rest for 45 minutes while preheating the oven to 475°F (246°C).
  6. Score the loaves with a sharp knife and optionally add boiling water to a pan in the oven for steam.
  7. Bake the bread for 20-25 minutes until golden brown and hollow-sounding when tapped.
  8. Allow to cool for at least 5 minutes before slicing and serving.
